Is it normal to see different FuelTrim_High values every X

Every log session my FuelTrim_High is different - as low as 97 and as high as 113.

What is this value and what will change it?

One more Q,
Is there a way to save a setup my log parameters to my preference so I dont have to deselect whatnot, and check LC1, and open a knock widget every log session?
