Flashing a different ROM to ECU with more tables.

Was speaking with one of the tuners over hear in Australia and he was saying that when they re-flash the ecu for ECUTEK that they can access and modify such tables as Launch Control and a number of other options. which sounds very similar to the GrpN ecu options. Now would all the ecu ROM chips be the same and have the same addresses with just nothing allocated to them?

Now i have an ADM 02 STi ROM - A4RG060P
On the JDM, USA and EDM version they have "Intercoller" options.
for some reason mine does not, but i have auto water intercooller sprayers controlled by the ecu even thou the tables dont exist???

Would also love to be able to have a table for LC.
I know on scoobymods etc it say not too changes table version etc which i dont particularly want to do, just want to know if it is possible to either create or copy these table into my current ROM???
